Know Your Coffee: Red Pacamara - Carbonic Maceration (272 hrs), Natural

Pacamara is a cross-breed between two varieties, Pacas & Maragogype. It is a big-bean variety, meaning the coffees physical size is noticeably & almost comically larger than any other coffee on market. Pacamara is a famous variety among coffee enthusiasts because beyond it’s size, is known for massive sweetness in the cup. Because of its low yield, this lot was best produced as a cooperative of several farmers in the Jinotega & Matagalpa growing regions in Nicaragua - which we believe to also add depth of flavor to the cup.

While most coffee is fermented in open-air for a short period of time (usually much less than 24 hours) - extending the fermentation process can create rare & sought-after results that are unparalleled among conventional coffee. 272 hours of meticulous fermentation (temp & brix controlled in sealed fermentation tanks) leaves us with a clean & complex cup. The long fermentation adds texture & mouthfeel for a silky, jammy & easy-drinking experience. Layered notes of tropical fruits lace the cup with sweetness and fun. And as always, all fruits no funk!
