Know Your Coffee: Banko Chelchele - Supernatural Lot #2
This coffee comes from smallholders in the chelchele area, part of the gedeb district in southern gedeo zone, where some of ethiopia’s most complex & aromatic naturals come from year after year. this elevated natural process - designated supernatural - fresh cherry is sealed into carbon fiber drums & left to ferment anaerobically between 7 to 10 full days & between 15-18 degrees celcius. this stage allows the sugars in the fruit to develop far beyond where they would in a traditional natural without the risk of overfermenting. after the 10-day drum fermentation, the soft & syrupy cherry mixture is carefully moved to raised screen beds to dry, slowly & gradually in the sun. even though the name eludes to some sort of experience beyond our physical world - perhaps it is suggestive to the journey your taste buds will soon embark.
