Spectrum is an exceptional gesha coffee prdouced by the world famous, savage family. renowned for its innovative processing techniques & complex flavor profile. introduced in 2022, spectrum has quickly gained recognition for its unique characteristics & excellence in the cup. spectrum undergoes a meticulous natural carbonic maceration & washed finish (hybrid process). the ripe cherries are placed in hermetically sealed, stainless steel tanks, where they remain sealed for 100 hours. co2 is injected at regular intervals to establish a controlled & regulated fermentation environment. during this time, the coffee seeds absorb high fruit notes & finer aromatics from the coffee cherry itself. temperature & ph are frequently monitored to ensure the fermentation variables remain within the predefined limits.
