Gesha - Washed Process

Know Your Coffee: Finca Tizaquin - washed gesha - Raul Solis Paiz

This Washed process gesha is from kati’s family farm in esquipulas, guatemala. her great aunt & uncle started the very first farm there & grew coffee on three hundred hectacres of land. today - because of climate change, generational challenges & a shortage of workers this plot of coffee only occupies a total of thirty hectacres - a mere ten percent of what it once was. through a dedication to coffee excellence - we hope to participate in a drastic change & even witness growth over the coming decades. this lot is a result of a direct partnership with the grower. with ample amounts of communication we can meet the farms needs as well as overcome any socio-economic or climate challenges.

the gesha variety is saught after throughout the world. it is known for its structure & balance as well as its complexities. raul’s gesha is an excellent example of what this great cultivar can offer. While the natural process version leans more into jammy notes of berries, the washed version takes a personality of its own. both processes seem to share a lively green apple-like acidity that carries throughout the cup but the washed process highlights a more grounded tasting experience. Long lingering aromatics that remind us of freshly tanned leather, the crisp oxidation of oolong tea & a sweet chocolatey texture that ties all of its complexities together.

try both the natural process & the washed process to get the full experience of the gesha variety from raul’s farm in guatemala.
