Know Your Coffee: Finca La Terrazza - Macerated Natural Process - Pink Bourbon
Another excellent microlot from juliana guevara & her husband, wbeimar lasso. this pink bourbon variety was grown on one of the highest plots of land on finca la terraza (1950MASL). a short but impactful pre-fermentation (or maceration) is just enough extra processing to exaggerate this coffees most redeaming qualities. generous notes of Guava, hibiscus, cherry & roses compliment this syrupy texture that i can only compare to cocoa liquer (not boozy!) or the elegant allure of chocolate truffles as they melt in your mouth.
