Juan carlos losada is a coffee producer with over 20 years of experience. he owns three lots of land that total a humble 55 acres for coffee production. Ripe cherries for this natural processed coffee are macerated for a prolonged period of 82 hours before being dried on raised beds in the sun. this “pre-fermentation” before drying is a small but impactful step that heightens complex compounds within the coffee resulting in more dramatic & refined flavors. we taste a spectrum of fruits that range from sweet strawberry to aromatic tangerine zest. the texture of this coffee was notable that reads like a ganache or dessert chocolate.
