honey process is a hybrid of the washed & natural process - it utilizes less water than washed coffees & in this case, creates a perfect marriage of florals & fruit notes. there are yellow, white, red, black designations of the honey process itself - but easier said, the darker the color the more mucilage (aka honey) remain on the coffee after de-pulping, with less frequent turning & slower drying times. the result of darker honey process coffees, like this red honey, is a more complex & layered tasting experience.
this cooperative lot is composed of 705 farmers in the worka chelchele, gedeo zone, ethiopia. the execution & cleanliness of this coffee is a noteworthy achievement that brings together a classic ethiopian terroir, meticulous processing notes & vibrantly juicy fruits without drama or excess.
